catfish can be a little slimey and be ok. the main thing you want is the catfish to be white and not see through.
also when cooking whole cuts of meat the important part is to cook the surface area thrououghly.
you could buy a week old piece of meat at the super market and drop it into boiling water for a few minutes and chances are you would be just fine eating the raw meat in the center since it hasnt been exposed to the air.

bacteria is generally aerobic and requires air contact.

next time try baking it in tin-foil with some seasoning and lemon. 20 - 30 mins at 400F. Mmmmm catfish goodness.

bread it in cornmeal flour mixuture seasoned with salt and a little cayenne. Fry until it floats. . .
