SMS stands for "short messaging service". It only supports text messaging with a max of 144 characters including spaces.

MMS stands for "Multimedia messaging system". It supports images, video, audio, as well as text messaging. In theory, it enables people to use their phone cam and mic to have a "webcam" conversation through their phone. In practice, no network in the United States has really implemented this capability.

Anytime you send a text message to your friend, you are using SMS. When you send a picture, song, or video to someone else, you are using MMS.
