What's the difference in DDR ram(between 1600, 2100, and 2400)????

the 1600, 2100, and 2400 all stand for megbytes per second of bandwith. So they have about 1.6, 2.1, and 2.4 GB/sec worth of bandwith, respectively. PC1600 and PC2100 are industry standards, just like pc100 and pc133, but pc2400 is overclocking ram, just like pc150.
 
The difference between these is essentially their front side bus speeds. PC1600 correlates to a front side bus of 100 MHz, PC2100 = 133 MHz and PC2400 = 150 MHz. If your CPU is a 266 MHz front side bus then PC2100 is probably the best fit for you. The new SiS chipset for the p4 that has DDR is able to use PC2700 RAM = 166 MHz, but I think that is a first in DDR chipsets. It probably isn't worth the money to get anything more than PC2100 for a SiS 735 motherboard.
 
Also, is the ECS K7S5A a good motherboard?

Ain't worried about overclocking options(which I'm certain it lacks anyways), but I am worried about stability(its for my folks).

Not necessarily. As said before 2400 isn't an official designation; it's just tested at that speed. If you order PC2100 you have a decent chance of getting ram that would pass as PC2400. The PC2400 is just basically hand-picked "best of batch" stuff.

because according to eg. SiS DDR333 (=ddr2600) should become standard early 2002. (Thats why their 745 chipset board supports it, too)

The question is the 'real life' performance gain with current TBirds....and you may be right that then the ddr333 ram may be 'only' an OC option...eg. clocking @ 150/160 whatever instead of 133....

btw. i am VERY opposed to OCing especially the FSB...ok this is some time ago (amd K6-2 times)..but after looooooong time of OCing and trying to squeeze out the last i CAME to the conclusion that the 10 or 15% perfgain are NOT worth it.....and a stable system is more worth than a system with 'unexplainable' crashes....and there are programs around which would have really STRANGE behaviour if the FSB is OCed..and i _mean_ errors which you usually would not associate with an OCed bus ! I mean...what's the point in getting a superfast system (eg. 1.4 TBird and latest fancy schmanzy stuff)...and then trying to sqeeze and OC it so it gets 10% faster 😉)))
