What's the difference between Servers and Regular computers?

Servers are really good at hitting the tennis ball hard. Regular computers are good at tracking their veloicty.

servers often run more than one... i use a server shared by coworkers for example, we all have web servers running on different ports.

Real answer:

Servers are made differently in the following areas:
* Reliability and stability are the #1 priority, even over performance.
* Packaged in a form-factor that allows it to be mounted in a 19" rack.
* May have the ability to use redundant power supplies (related again to reliability)
* Minimal graphics capability, as web servers do not need it.
* Often has remote administration abilities built-in.
* Companies often have deep pockets, so servers can afford to use top-of-the-line processors.

I am sure that there are others, but you get the idea.

Note that you can use any sort of computer that you want to as a server (and many people do), but servers are expected to be more reliable.
 
Technically there is no physical difference. The difference is how they are used and the software that you run on them. This sometimes dictates the hardware you want to use (an awesome video card is great for a gamer's computer but pointless for a web server).
