What's the difference between EIDE and SATA

Not SATA and EIDE - you mean SATA and PATA. Both are EIDE - ie., Enhanced Integrated Drive Electronics. But, they use different means of getting to where they are going. Serial ATA and Parallel ATA. Serial are the newbies, Parallel are the oldies.
 
cable form factor - unless you're willing to pay Raptor prices where you give up capacity for speed.
