A recipe I was looking at said I should use drawn butter, but that melted butter is acceptable as well. So.....WTH is the difference?

Aight, thanks.

So after I melt the butter I just skim the fat off? Bah I'm too lazy to do that...............

Is there a problem if you replace standard butter in a recipe with clarified butter?

Clarified butter loses most of the milkfat. So yes, there is a difference. At the restaurant I worked at, we used clarified butter in most sauces, and normal butter in the actual foods.
