Baltic Birch is probably the best (slightly more rigid than MDF). MDF close behind that. Design of your sub will account for a bigger difference than the materials though.

Aim for 1" to 1.5" thick for a good sub (if you're using high power high excursion drivers), especially in the baffle.

Bracing is more important for sub enclosures than the thickness of the walls, once the thickness reaches a certain point.

MDF is easy to work with, as it's dimensionally stable (and true), cuts easily (but you need breathing protection), and you can find it anywhere.

Apex, I think baltic birch plywood is a hell of a lot stiffer than MDF.
