What's the best way to go about getting leather seats?

Apparently G20 seats fit with some modification to the rails. I can get them re-welded if required. Another option are these leather recovering websites that you buy covers and tools and whatnot from and then do it yourself.
 
Either a junkyard or have a shop do it all.

I wouldn't weld the rails, they are part of the safety of the car. You and the welder do not want the liability of those welds breaking in an accident.
 
Personally, while I've had both leather and cloth, I prefer cloth in a sportscar. It simply holds you in better. Now, suede would probably be really nice, but that's herder to come by.

Of your options, I would think that the G20 seats would be the way to go if they provided enough bolstering.

I have leather, and I could care less about leather vs fabric. I would rather have fabric prolly...

Of course, leather is a little easier to clean. (Just wipe it with a damp cloth)
