By commercial I meant pretty much available round the country.

Sadly the best I have found in Vermont is Cabot which is not my favorite mozzarella. Great cheddar though.

How much does mozzarella go for in the states? I never used to buy it but here in Italy I've been getting it pretty much every time I go to the market and it runs about 3 euro per 250 grams. Kinda expensive.

Grande is the best performance as a functional mozz. For a fresh mozz, harder to say, there are a few good regional ones.

Of commercial mozzarella I've not noticed any real difference between Polly-o, Sargento, Calabro, Sorrento and store brands. I doubt anyone but a cheese expert could tell one from the others blindfolded.

One thing is that in any brand there's a BIG difference between the full fat version and the part skim version. The part skim always melts funny and browns badly, I won't go near the stuff anymore.

I think the big difference is between the fresh, which is sold in a water base liquid, and others which are shredded or sliced.

I can't recall seeing whole milk mozzarella in a long time.

The mozzarella I linked above is part skim and we've had trouble no trouble cooking with it.

Last time I purchased some - just a couple months ago, it retailed for $1.98 per pound. I think it was Sargento. That's the price for buying it in bulk - (by the ton, unshredded.) I bought a 50 pound case from my friends.
