What's that nasty creamy white stuff that comes out of ...

    ...chicken when you cook it? Is it caused by freezing it?

    Is there a way to prevent it from not coming out? I always have to scrape it off.

    It's basically microscopic amounts of fat supsended in the meat's juices.

    There's no way to stop it really. Just scrape it off.

    No not fat. Even when you fry it, it still comes out. Its almost like soup scum.

    It's just the juices cooking. It has nothing to do with freezing it. You get the same thing on pork/beef. It's a mixture of water/blood/fat/other natural stuff in meat.

    Yes, it's the fat coming out of the meat. Fish will do that too..

    Is there a trick to reducing it?

    Does that mean I'm cooking at too high a temperature?

    Yep, fat-juice.

    As you know, fat turns white when it is cooked. Chickens, especially ones raised in factories, are not the healthiest of animals. They have a considerable amount of fat kicking around in their body, including their body fluids and blood. When you cook the chicken what you are seeing is the microscopic fat in the juices becoming visible.

    EDIT: There is no real trick to cooking it, except maybe de-juicing the chicken a little, or getting chicken meat that wasn't from a factory farm.

    Searing the meat can help a little, but generally you only do that with large chunks of it (ie, a beef roast or something). Just don't worry about it.

    Edit: If it doesn't leak out that means it stayed in. Considering how nasty you think it is, you would want it to come out.
