I think it's actually from a mongoose or something, more like a cat-relative...if I remember correctly.

Civet Cat coffee. The civet cat loves them coffee beans and they eat it and excrete it. Some people say that the enzyme from the cat's digestion adds a unique flavor to the coffee.

Don Schoenholt is CEO of Gillies Coffee Co. the oldest coffee company in America. It was founded in 1840.
He is one of the Specialty Coffee Companies of America's "Founding Fathers" and a past president.
He is also the specialty editor of the Tea & Coffee Trade Journal and has been honored as "Person of the Year" by the magazine. He is generally considered to be about as knowledgeable as it gets with regards to coffee. If you are ever in a bookstore, look in the coffee book section. In almost every book he has been thanked, reviewed the book, co authored it, or edited it.

I have spoken to him on the phone many times. I ask him about this whole civet crap coffee issue and he bluntly said, he has never seen any evidence that such coffee really exists. Due to his prominence in the coffee world, that is about as close as he can come to saying it is pure BS and the folks selling it are con artists. But, the story is so wild, that it has a life of its own, like all URBAN LEGENDS.
