What's on the dinner table for tonight?

Tonight I decided to go spicy.
1 pound skinless, boneless chicken breast halves - cubed
1 cup Italian-style salad dressing
2 teaspoons Cajun seasoning
1/4 cup olive oil
5 cloves crushed garlic
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 onion, chopped
1/2 pound fresh mushrooms, sliced
1 cup white wine
salt and pepper to taste
6 roma (plum) tomatoes, chopped
1 tablespoon chopped fresh parsley

Marinate chicken in salad dressing to cover, for at least 1 hour.

Heat the chicken with Cajun blackening spice in olive oil. Add crushed garlic, bell peppers, onion, mushrooms, wine and salt and pepper to taste. Saute until tender. Add chopped plum tomatoes and chopped fresh parsley to taste. Serve.
Cooking it minus the mushrooms since I hate mushrooms.

that's a good looking recipe! are you supposed to serve it by itself or over pasta or something? I share your loathing of mushrooms, and raise you black olives.

Serving it over linguine.
 

I have boneless chicken breasts baking with rice, red onions, fresh garlic, red peppers in a dry lemon pepper seasoning with cracked black pepper.
Then steamed broccoli and a fresh tomato, cucumber, onion and green pepper salad in EVOO, vinegar salt and the master spice.

Subway.

6" roast beef with lettuce, cheese, mayo, and mustard. On parmassean (sp?) oregano bread. And a oatmeal cookie. LOL!

Garlic lime chicken, steamed dill butter radishes and corn. it was REALLY REALLY good and easy to make! AIM me if you want the recipe!

That recipe sounds very good except for the roma tomatoes. I don't care for them. I prefer home grown picked off the vine. :D

I love that trivia game. One day at lunch I had the place at #2 in the nation.

I was the only one playing at the time at that location.
