baked potatoes.
Just try not to trash it with too much ceese and stuff like that. If you can eat them with very little butter/sour cream, and eat the whole thing skin and all, these are very good food.
I make salads with no fat cottage cheese for a quick meal.

I love fresh veggies. I go to the supermarket and pick up carrots, radishes, cucumbers, fresh green beans and snack on them. As for healthly take-out, that's tough to find.

I also live alone and have found that a good microwave and a george forman grill are my best friends. I will debone chicken breasts and marinate them in a variety of different things.Once a month or so I'll roast a chicken or turkey and freeze the meat,I make soup from the carcass and freeze it. I also make pasta sauce in batches and freeze it.

Invest too in containers that will go from freezer to microwave, makes cooking much easier

Rice
Bread
Almost all fruit
Many veggies like broccoli, cabbage, beans, potatos, and carrots to name a few
Milk products like cheese
Chicken, turkey, lean beef, lean pork
Tofu

The biggest problem with heating healthy, to me anyway, is that it's very, very inconvinent to go to the store, thaw stuff out, cook it correctly, and clean it up.

Ah but when your overweight hulk finds itself sitting in a hospital room with a cardiologist hovering over you listening to your wheezing breath would you say to him, "You know what, Doc, if I could do it over again, I think I'd put up with the slight inconvenience of eating healthy."...?

Exercise, too! Must to both! 😉
