I had beef dip made from a roast I cooked on Sunday, some fancy french cheese and baguette (I can't remember what kind specifically), and a Kilkenny.

Not really, something I created myself. It's chicken, rice, cream of chicken soup, salsa, black beans and corn smothered in jack cheese.

sounds more southwestern than tex mex.

tonight will be the same thing as last night -- it was a 14 ounce steak and I cut it into 3 portions (5 ounces last night, 4.5 ounces for lunch today, and 4.5 ounces for dinner tonight)... and I've got a whole second steak in the fridge, so I'll probably be eating swordfish all weekend. lol.

I'm thinking maybe I should have just bought one.
