Whats a easy way to just record speech through my USB mic?

It seems so simple like it should be built it to computers to just be able to make a audio file and hit record so it can capture your voice or whatever you want to record through a mic. I have a really nice USB noise cancelling mic that works great in games. I just want to find a simple way to hit record and have it record from the mic into say a wav file. This must be simple. How'?
