what would you substitute for andouille in gumbo?

so, I'm kinda seeing someone who's Muslim enough that he doesn't eat pork but not so Muslim that he doesn't have sex with guys.

I really want to cook him some cajun food, but I can't figure out how I'd make gumbo without andouille, if only for the seasoning.

Mexican chorizo sausage is one of the alternatives, so is kielbasa sausage. German style smoked sausages can also be used.

Since he's gay... i'd go with Kielbasa.

There is andouille made without pork. You can get all-beef or beef-chicken or even turkey andouille with traditional andouille spices and something very close to andouille flavor. If that's not an option use any non-pork SMOKED sausage that you can find and add some cajun spices to replace what it lacks in seasoning. I wouldn't use chorizo, despite being a spicy sausage it's really nothing like andouille in taste or texture.

This, My first choice would be smoked beef + pork sausage, then smoked beef sausage then smoked pork. You could accomplish almost the same thing by using poultry sausage with fatback added.

All this is +spices you lurve.

I used a turkey keilbasa for a gumbo this thanksgiving. It was pretty good

Look up a recipe for making andouille and get the spice mix. Add that to the dish along with a mild beef smoked sausage, whatever you can find. Could try w/ chicken sausage too, but that stuff usually sucks because it doesn't have the texture or fat content.

Whole foods sells andouille chicken sausage I believe. It doesn't really come close to the real thing, but may be a reasonable substitute. It's one of their prepackaged brands (i.e. not sold at the deli counter)

I should write up the conversation we had wherein I asked him if he celebrated Christmas :p

but thanks for all the replies! I'd imagine some type of smoked beef sausage would make the most sense, with the higher fat content than chicken sausage (every gumbo recipe I've seen has involved cooking the sausage and then using the fat drippings in with the roux)

a lot of 'beef sausage' or 'chicken sausage' still has pork casing. so read the label. or maybe go to a kosher/halal market and find some smoked sausage.

They have chicken andouille, though I don't know if you'd be able to get it locally. If you want to order it online, here is a site that sells it. I'd call them up to confirm that it's pork-free, and if it's not, ask them where you can get it without pork.

I'm not suggesting you make sausage. Well, I am, because it's a lot of fun but it is generally an all day activity best shared with friends and lots of booze. But you could take the spice mix there and add it to whatever smoked sausage you buy, so that you still get the flavor. I'd skip the liquid smoke - andouille is usually smoked over pecan wood, I think. That's not the flavor you're going to get out of a bottle.

In retrospect, why not just lie to him? It's not like he is going to heaven anyway. His life will be fuller when he experiences "Yak" bacon and honey baked "Ostrich" butt too.
