What would be a more pratical setup:

1. Evga 780I Nivida Chipset Motherboard and 2 8800GT's in SLI

or

2. Asus P5E X38 Intel Chipset Motherboard and 1 9800 GTX
 
The answer depends on who you ask.

Either would be a fine choice. Because I have success with and prefer Nvidia chipsets I would go with the 780i and 2 8800GT sli setup.

And I understand that some people hate Nvidia chipsets, everyone is entitled to an opinion. I also understand that X38 is a better overclocker and supposed to be a more stable chipset.

But I like my games and so far I haven't had any problems and enjoy my SLI performance for the price very much.
 
You could consider getting the 780i with the 9800 GTX. That way you'll have close to top performance and the option to add another 9800 GTX when the price goes down. Just make sure your psu has enough connectors if you go this route.
