For a video game, I would have to say that Gran Turismo 3 has a pretty solid soundtrack. The nice thing is, there's enough songs on there that you don't hear the same song every 5 minutes, a la Tony Hawk 1/2/3.

Unreal Tournament. Have the 2 cd set in my vehicle, rocking soundtrack. Ultima Online (or any of the series actually) have excellent music. It's usually midi because it's so old, but they are perfect for the setting.
