What veggies you guys eat?

So I'm trying to have a healthier diet for morning/midday/afternoon snacks. The problem is I don't have much of a list to start with and need more variety and am looking for more types of vegetables to augment my plan. Any other nutrition tips will be greatly appreciated.

I usually try to have the following:

Morning:
- 1 half muffin or whole balance bar

Mid-morning:
- 2 - 4 ounces carrots / 2 ounces celery / 2 ounces broccoli
- banana / orange / apple

Mid-day:
- 1 ham & cheese sandwhich

Afternoon:
- saltines or peanuts

I love broccoli, green beans, cauliflower, corn, and carrots. If you find yourself lacking vegetables I woudn't fret too much, fruit is very healthy as well. But most importantly, I LOVE a good salad for a meal. Gets protein from the meat in the middle and the vegetables all around it!

Not much. Celery with peanut butter at some point every day. After that, who knows.

I eat a good size portion of raw broccoli every day. Aside from the lettuce in my tuna fish sandwiches, thats about it. I have also discovered that Applebees will make their Apple Walnut Chicken Salad with fresh spinach instead of lettuce. I had one of those last night and it was great!

I just grab a bag of mixed veggies @ the store and have a cup of whatever is in those.

Frozen spinach, frozen broccoli, oranges, carrots, bananas, green salads with vinegar dressing, soybeans, asparagus.

Carrots are my favorite, but I fear that I eat too many. I go through 6 to 8 pounds of baby carrots a week.

Carrots are great, but they reek havoc on my colon if I eat too many. I tend to eat about 15-20 a day w/ Hummus or something like that.

For the OP, I recommend the Green Giant frozen vegetables that you can microwave. They make "single serving" trays you can pop in the microwave that will steam right there, and many of them are flavored w/ seasoning, infused w/ olive oil and rosemary, or have a low-fat cheese sauce. They also have 2-3 serving bags that you can steam right in the microwave. It's great for lazy people like me.

That can get expensive though. I bought a 5 pound (or 10 pound) bag of frozen broccoli at CostCo for pretty cheap. (I don't remember the exact cost, but it was trivial.)

To cook the broccoli, I use a microwave steamer or my rice cooker/steamer.

Broccoli is a staple in my house. After that I eat a tonne of tomatoes, spinach, peppers, cukes, and lettuce. I also recently re-discovered the wonderful world of jicama, so I've been having that as a treat/snack on a pretty regular basis.

Broccoli, Green Beans, Squash, Carrots, Tomatoes are the main ones I like.

I eat green beans almost every single day w/ my dinner. It's the more tolerable vegetable IMO, and it actually makes other foods more tolerable. Like when something is too dry, boiled green beans really help.

carrots, romaine, arugala, broccoli, green beans, brussel sprouts, corn.....

and some others that appear in vegetable meadly bags (ie. trader joe's vegetable foursome)

Carrots are ok, but I really love celery with peanut butter. Beyond that, Broccoli and cauliflower are good steamed, green beans are a staple (my kids eat them) and anything else is a luxury hopefully found in a dinner.

Salads can be good. Personally I love whole grain pasta mixed with spinach and a light vinagarette.

Do people mistake you for a jack-o-lantern? :p If not I wouldn't worry about it. AFAIK The only dangerous source of vitamin A is usually retinol from animal based supplements. Your skin can turn orangey yellow from too many carrots though...


from the OP, I don't have the best diet but I do eat a lot of different things which helps balance things out. I don't eat 1 of the same thing every day. A cup of yogurt in your daily mix might be good.

I usually have yogurt 4-5 times a week, mostly as a smoothie blended with fresh fruit.

Mornings I eat generally low sugar pastries like fruit scones, croissant.

Mixed fresh fruit, usually mango, berries, honeydew, grapes. (have easy access to fresh fruit salad bar every day)

Nuts from time to time, low salt. Low salt cashews, peanuts, macadamia.

I used to eat bowls of raw broccoli with balsamic vinegar and cracked pepper.

I have protein shakes with blended banana too in soy milk, especially before workout/sports.

I get fresh soy milk too and it's great. Oftentimes it's still warm as it was pressed like a an hour ago. It works well to stave off some snack attacks and gives me some needed protein in my fairly low protein diet.

Those are just what eat in between meals. My meals are pretty balanced. Last night I had snow peas and beef on white rice in an onion curry sauce, other night I made fresh (as in I bought it from a fish tank) poached (in white wine) black bass over wilted garlic and olive oil baby spinach, night before I had mixed orange and yellow peppers, onions, mushrooms sauteed with shrimp. etc... I think variety keeps things from being boring and if you look at my diet (my normal eating habits), its pretty balanced and nutritious and makes no compromise in taste. I am fortunate to have access to great grocers in the NYC area but supermarkets from here to alaska have most of the same stuff.

Veggies: broccoli, carrots, spinach, peppers, tomatoes (when in season), green beans, zucchini

Fruit: apples, bananas, oranges. Peaches, cantaloupe, blueberries, raspberries in the summer

My favorite vegatable is probably asparagus. I love it scorched on the grill for a few minutes. I usually just serve it with a bit of cajun seasoning salt It is uber delicious and IMO best served with steak.

That said, I also eat other veggies too. Some favorites: peppers, onions, asparagus, peapods, okra, cabbage/bok choy, mustard greens, chickpeas, collard greens, leeks, garlic, shallots, lettuce, tomato, potato, bean sprouts, bamboo shoots, radishes, coriander/cilantro, parsnips, sweet potatoes, water chestnuts, yams, corn, carrots, celery, cucumber, scallions

That said: I LOATH broccoli. It is the worst smelling and tasting thing EVER. I am 100% intolerant of it and anything that broccoli touches tastes horrible to me. While broccoli or cauliflower or whatever it's called is also horrible. I hate cauliflower because it looks like broccoli and the looks alone make me sick. I don't understand how anybody can actually like that horrible disgusting flavor. The worst is when it's boiled and it gets super soggy and it makes the whole house smell like farts. Ewwwww! Thankfully, I no longer have to face "broccoli exposure" very often. Also, the worst smelling farts are the ones that smell like broccoli. Did I mention i hate broccoli, I can't seem to mention it enough.

......... Also, the worst smelling farts are the ones that smell like broccoli.

I doubt it smells that much worse then asparagus pee :p

edamame, asparagus, squash, green beans, brussel sprouts, bell peppers, spinach, scallions, onions, tomatoes (favorite is sun dried tomatoes) leaf lettuce, avacados, cilantro...
