I'm eating a slice of icebox strawberry pie with a cream cheese/whipped cream topping right now :thumbsup:

I'm declaring this summer the Summer of Pie :p I've decided that I'm going to bake a pie every week until I can make a perfect pie crust... I've got the recipe down (cold butter, etc) and it tastes great, but I fail at rolling it out into the pan, getting the ridges right, etc. I figure practice will make perfect.

Try using lard instead of butter. The best pie crusts I have ever tried have been made with lard.

I was going to post this. Try it at least once. If you've never had a lard crust, you don't know what you're missing.

Last pie I had was no-sugar-added summer berry mix. Skipped the crust for myself and fed the rest of the pie to a bunch of friends. Yummy.

Yeah lard is great. I made it once and the lard was poor quality, tainted by meat juices. I ended it up throwing it away since it had such a pork flavor, totally unsuitable for pastry production. I'm getting some pure leaf lard and going to try rendering it again.

Lard or shortening is much, much more forgiving in a pie crust. Harder to over mix it.
