Should it be cat 6 or will cat 5 work also does anyone have good info on what plugs to buy and crimping and such?
Thanks

Cat 5e technically will work for gig but I would go Cat 6 for your situation. Find keystones rated for Cat 6 and you should be good to go.

I recommend the Belden Cat 6 if you can get it at a reasonable price.
The stuff is very well made.
I wired the entire house with it.
Its a bit of a pain to strip the ends, it has wire mesh shielding, but its really good stuff.

can someone help me get the tools I need and wirewithout getting ripped off ,some links please and maybe a how to do it link?
And will I need these keystone jacks(do these fit in the wall plates?)?
