I would get a good quality 400w or so PSU.
Make sure you get at least 20~25A on the 12v line. Apart from that you don't need to be too concerned.
Antec Truepower would be nice.

i just got a Fortron 530watt. I really like it. It's rock hard stable and very very quiet.

Check out the Enermax products, and definitely get one that is 430 or above as any future video card updates you might do will demand at least that much power.

Also be sure the power supply has 2 fans... one on the bottom and one for exhaust. That helps draw the heat directly away from the processor.

This may be a ridiculous question (as I've never bought a PSU seperately before), but all PSUs designed to fit an ATX case will fit in any ATX case, right? There's no way I could get one and then realise it wont fit into my current case?

ATX is a standard, so unless your case does not follow the ATX standard (which I have never seen), it will fit.

Neon lights and sleeved cables

I put on of these in about 2 months ago. It is a great pwoer supply. Has gotten wonderful reviews, and run my 64 just dandy. It is an awesome value to. They now sleeve all teh cables (in early reviews all weren't sleeved) and this makes it so much easier to work with.

I'll say get the Frotron 530W. It'll last you a good upgrade times in the future. If you're going to upgrade might as well get the biggest and Best!

I have a Vantec ION 400W PS... with a 500W peak, this supply kicks ass... it has an external outlet (120V), fan speed control, and SATA power cords included.. it's also quiet. and it's very low in price.

Pfft...neon....LED hehe.....I forgot that I got two neon fans to light the UV reactive stuff up. I guess UV reactive would have been a better description.

A decent 300W to 400W PSU will. Any thing larger and you are just wasting money.
