what type of knife is it?

I went with my gf to this japanese steak house where we had some hibachi steak, lobster and shrimp. For anyone who's not been to one, its pretty simple food, but you pay for the entertainment as the chef cooks your food in front of you while tossing/flipping and performing kitchen stunts with the eggs (try flipping a raw egg, shell on, with a spatula and then catching it , then flipping it again and breaking it by letting it fall on the edge of your spatula) and juggling the knives and other items. Some spectacle indeed since hes 2 feet away from you.

At one point he used this extremely sharp small knife to cut the steak into bite sized pieces, it was amazing coz he sliced right thru it without any effort. Does anyone know what kind of a knife that is? I'm thinking paring knife, but I'm not sure. I cook a lot and that knife would be handy.
 

It's probably a QUALITY paring knife.
JA henckels knives are quailty cutlery.

You don't cook a lot if you don't have a paring knife.

 

Well I guess I dont then I will soon have the power...of the paring knife!

Make sure you keep them clean and sharp. Don't cut something and then leave it to sit out, it will ruin the metal.
Personally I own a block of the 4 star knives. Probably the best kitchen investment -ever-.

It's probably not just a "paring" knife - it could be a utility or other various types. It's also the type of tang that's involved. It's probably a traditional carbon tang which can be honed to an extremely sharp edge at the expense of durability. Of course, those guys hone their edge before every performance and have their knives professionally sharpened once a week or so.

The best cutlery in the world! IMO anyways.
