When my father was diagnosed with terminal cancer he wrote out what he wanted for his memorial service. It was really an incredible experience. over 300 people came to a beautiful catholic church (not a religious ceremony, he had done work for the church and they offered the space).
We played:
Amazing Grace performed by Clarence Thomas, Doc Watson and friends
Shenandoah by The Men of the Robert Shaw Chorale
Then, when everything was over and people were rising to leave turn up the volume and play Arturo Toscanini conducting Stars and Stripes Forever.

It was great!

I'd say "Mars Volta - This Apparatus Must Be Unearthed" if only because I think the name would be hillarious. Plus the lyrics would work so well too. But the song itself wouldn't exactly fit any sort of ceremony.

They can cremate me to "The Dwarves - You Gotta Burn"

And finally, "U-ziq - Goodbye, Goodbye" for that one perfectly harmonious song.
