What software would be good at converting mp3's back to wavs?

I think most CD burning programs will do that. Also I think you can do it with Winamp as well.

I use EAC to make mp3's and convert mp3 to wav.

Winamp's disk writer plug-in is what I used to use.

Just to echo what others have already said, if it's to burn to a CD, Nero does it automatically when you drop the MP3 file into an audio CD compilation, and if you need it for any other purpose, use Winamp's included diskwriter plug-in, because you probably already have Winamp.
