Well, since boss is outta town, i am playing hookey and going home early.
I want to make a good, non-boring, non-expensive, dinner for two!
Any ideas are very welcome!
I am open to anything! :wine:

I actually made a baked chicken marsala last night and the wife loved it:


4 chicken breasts beaten flat

1/4 tsp paprika

1/2 cup bread crumbs

1/2 cup grated parmesan cheese

1/2 tsp dried parsley

salt and pepper to taste

1 cup sweet marsala or any sweet white wine

8 pats of butter.

Preheat oven to 350

Combine bread crumbs, paprika, parmesan cheese in bowl. Salt and pepper chicken to taste and dredge in flour mix. Use some non-stick spray on a pan and place chicken in pan and place two pats of butter on top of each breast and cover. Cook for about 20 minutes and then pour wine over chicken and recover and cook for another 10 minutes. Cook chicken uncoverd for 10 more minutes or until done.

This is about as close as you can get to a restaurant taste in under 15 min. prep time. It really tastes good!
