What should i eat in downtown Seattle

I've tried a lot of things, and haven't found anything extraordinarily good. Best thing i've had was the dutch bakery in Pikes Market. I like all types of food except Chinese (cuz i'm chinese :p). I really like Italian, French, Mexican, Korean, Vietnamese and Japanese food. I'm tried a couple of Japanese restraunts in China town, they were so-so. At least the owners seems japanese unlike in U district where they were all Korean. I'v also tried Dalia, Lola, Assagio, Salumi, and Glos(eggs benny #1! i love eggs benedicts) . I wanted to try El Grecko (sp?) brunch on weekends but couldn't make it. So what is something i must try while i'm still in Seattle?

BTW love the city!

Does it have to be in Downtown Seattle?
There's a Korean BBQ place in Bellevue that is very decent.
Price is a little steep though.

I know your thread asked what to eat and not what not to eat. However, i feel it is urgent to state the obvious: Don't eat the lampposts. They are not tasty. Also, do not eat pens.
