What RAMw/ Nforce3?

Slowly but surely (and late to the party) I'm getting the computer I dreamed of a year ago. Replaced my 3000+ with a 3700+ and my crappy generic PS with an Antec 480.
My question now is RAM:

1) 1G or 2G?

2)OCZ, Crucial, or Geil (or others)?

I play games (HL2, LOTR etc) on this computer now, but it will become my media server someday. I am more interested in making this puppy scream for now-- w/o replacing my previous upgrades.

Would you give me two types of recommendations: one best value and one best performance on an MSI Neo-Platinum (Nforce3)?

1GB of ram will be good enough for most people, though people who do photo and video editing will want more.
Ram companies generally don't matter with OCZ's VX line being the exception as it is warrantied up to 3.0V with it's EVP program.
OCZ's VX series is also able to cope with running at DDR500 at 2-2-2-5, and is rated for that speed too.

Stick with the memory in your sig. The 3700+ stock rated near the top of the S754 platform's overclocking potential. No use buying OC'ing RAM. Get a Raptor HD!
