To be honest if the person couldn't tell does it really matter? Pay for something you think tastes good not just because it has some easily substituted ingredient that you view as somehow better because its more expensive. They are complaining about receiving one mostly tasteless fish instead of another mostly tasteless fish.

Now if eating a whole fish rather than fillets it might be different but as stated they couldn't tell so that wasn't what was happening

Not sure about sole, but a lot of tilapia comes from China. Flavor/texture aside, that's a good reason to avoid it.

I think people pay the high price for wild caught fish. They have higher levels of omega 3's. And they aren't fed literal pig and chicken shit or given steroids as they are on asian farms.

Lot of the omega 3 is on the skin. Filets are usually served without the skin and covered in sauce.

But fish bait and switch doesn't surprise me. It happens all the time with seafood. I see it with Stone crab and Jonah crab and others.

Seafood specific allergies are real and in many cases with seafood allergies they are extreme to the point of being fatal. So yes, some people can eat certain seafood, but not other seafood without literally dying. Personally if I had any seafood allergy I would avoid it all, but not everyone does. They rely on what they order to be served as they ordered it.

If they had a fish allergy it would be caused with both of the listed fish... While fish and shellfish get grouped as seafood they are biologically different. Even shellfish gets broken down into crustaceans and mollusks although joint allergies for those are common.

Some people can be allergic to just Tuna for example or Tuna like fish, but can eat other types of fish with no problems. The common allergies are not usually that specific, but specific allergies for various seafood fauna do exist.

If all the employees are making tips that put them at min wage or higher, then the restaurant is legally paying less than minimum wage. So his statement is correct. It is just making the customers pay the wage instead of the restaurant in the first place. That was the point he was trying to get across. He didn't go into every little nit picking point because that wouldn't make a good show. So pointing out that if the employee with tips doesn't make minimum wage, which doesn't happen often, that the restaurant is still liable for making the difference wouldn't make a show.

Side note: The times I know where that happens, from my past working that business, is if an employee has to force a restaurant to make up the difference to meet min wage requirements, chances are that employee is going to be looking for work soon. The restaurant can use that an excuse for poor performance and fire the person.

Bait and switch on seafood, at least 90%. Suckers can't tell the difference. And it's not just restaurants, supermarkets and fish markets will do the same thing. If you think you're buying filets or steaks of an expensive fish like Chilean Sea Bass you're almost certainly getting some other cheaper similar fish that they pass off as the more desirable species.
