Not sure about sole, but a lot of tilapia comes from China. Flavor/texture aside, that's a good reason to avoid it.To be honest if the person couldn't tell does it really matter? Pay for something you think tastes good not just because it has some easily substituted ingredient that you view as somehow better because its more expensive. They are complaining about receiving one mostly tasteless fish instead of another mostly tasteless fish.
Now if eating a whole fish rather than fillets it might be different but as stated they couldn't tell so that wasn't what was happening
I think people pay the high price for wild caught fish. They have higher levels of omega 3's. And they aren't fed literal pig and chicken shit or given steroids as they are on asian farms.

If they had a fish allergy it would be caused with both of the listed fish... While fish and shellfish get grouped as seafood they are biologically different. Even shellfish gets broken down into crustaceans and mollusks although joint allergies for those are common.
