Alright, my computer here at work is in need of a reinstall. So, what should I put on? Here are the specs:

Forgot to mention: Currently running Win98SE

HP Vectra
P2 333
LX mobo
320 meg ram
soon to be 60 gig hd
dual Matrox Millenium 2's (4 and 8 meg)
generic soundcard
NIC

I would like to use XP but I think this system will choke. I'm thinkin I might try my celly 566 in this thing on a slocket. Only thing one that is this board has a VRM on it for this chip (2.0V?). Will an adjustable slocket be able to make it work? (IWill Slocket 2or3).

This is not General Hardware related.

It depends on what you're doing with it - XP would run quite usably that system with the graphics turned down. If you're not going to use XP's extra features though, 2K is a better choice.
What model is the motherboard?

Agreed. Use XP if you need the extra bloat - er - features, but beware that you'll need to turn down the GFX effects (menu shadows, fading, animations, etc.) to get a system that would be responsive (as defined by most of the CPU speed freaks here 😉). Windows 2000 would be a better choice if you don't need any features that are added in XP. Bear in mind that you have enough RAM for either OS, so that should not be a concern; however, the availability of drivers for some of your older hardware should be something that you should check out.
