what motherboard to get??

I am going to buy a new Motherboard tonight and I'm still not sure what to get. I was thinking at first of going SLI with one 7800gt to start then when prices drop getting another one. But then I read about SLI not being that great and was told to get the DFI LAN party ultra D and get a really good top of the line video card. But I'm not sure what to do I was originally going to get the Asus A8N SLI premium with a 250 gig 16m cache WD HD, Opty 148 processor, 7800gt Video card, 2 gig corsair value ram (1gx2 ), X-FI so platinum sound card, Nec dvd burner, and for cooling a Zalman VF700 VGA cooler and a Arctic cooling Freezer 64 pro and overclock the heck out of it all !!! But then I was told to get a DFI LAN SLI expert or get the Ultra with a EVGA x1800xl and over clock it to a xt.. WHat is the best way to go??? Is SLI the best way or is 1 video card better to go with ??? wich MB the DFI or Asus ?? ( I love Asus boards the work great and never gave me any problems) I am pretty good with computers but dont wanna waste my money if its gonna be a big hassle??? or not going to work good with alot of bugs.(I heard DFI boards are hard to work with) please help me decide !! I wanna order tonight

OC's nearly as well as the DFI, not as picky on RAM, and cheaper.
Also the MSI Neo4 Platinum is a very good choice.

I'm definitely not a fan of SLI. I think you'd be better off saving your money and getting a non-SLI board.
