What Memory to get?

Okay, so I got a i5 2500k and ASUS P8P67 MB which can handle up to DDR 1600. I am looking to pick up an 8GB kit (2x4GB) and I have two questions (keep in mind I mostly play games):

1) How much difference does memory speed make? What is the real world performance difference between DDR3 1066, 1333 and 1600?

2) Would it be a good idea to get a lower speed set of RAM, but a high quality one and overclock it to the faster speed timings (to save some money)? For example, this set of DDR 1066 RAM at newegg (G. Skill Ripjaw series) is $79.99 and looks like it has nice heatspreders and timing 7-7-7-18; would something like that be a good overclocker?

Memory speed makes a slight difference compared to CPU and GPU.

Memory is relatively inexpensive now, I'd just get the 1600 at least.

Check the Qualified Vendor list in your ASUS manual if you don't want to take any chances.
