What kind of fan do I need?

I have an Antec 3700AMB with spaces for two 120mm fans. The case came with one but it died. I have a 3 pin connector on my motherboard that says is for SYS_FAN. I guess I plug the fan in there and the 4 pin into the PSU? Now what is a quiet fan that will move alot of air to keep my 2800+ Newcastle @2.2GHz and Leadtek 6600 GT cool? Next question is if I ever want a 2nd 120mm fan, how do I control the speed if I only have one SYS_FAN connector?

its recommended that you run fans(especially higher power ones) off the power supply chain, not from the mobo itself

usually most fans come with a 3 pin to 4 pin adapter. If it doesn't say this at the site you buy the fans from, I would recommend asking the site to see if they incluse this cable, if they don't, buy 2 of them.

i was sure the connector on the mobo is just to control monitor RPM, not give any power.

they can give power too, if the cable has one wire going to the mobo it reports fan speed, if there are 2, it can power one too

so if i only want one fan and want to control the speed based on temp, i can plug it into power supply via 4 pin connector and plug the 3 pin into mobo to monitor?

no thats not the way it works. You don't need to worry about controlling this fan. It is very very quiet even on max. The 3 to four pin connector changes the 3 pin power connector to a 4 pin connector which will go to your power supply
