As a generic statemen latex doesn't do anything for ESD. Although some work some don't. You still should conform to the standard procedures for ESD Prevention as latex and nitrile gloves can develope a triboelectric charge, yes even though they are insulators... Here is a good read:

Thanks for the link, I think my biggest concern is protecting the components from finger oil and skin particles. I thought maybe I'll do this build with gloves on to minimize fingerprints, etc.
