you know like, ns1.anandtech.com and ns2.anandtech.com. how long does it take to change over to your new specified name servers? it says 24-48 hours, is it usually within 24 hours or before, or usually in between 24-48?

i'd say 12-48... but that's not just for one name server, obviously, it's for it to propagate around the world.

It's more like 72 hours to propagate fully around the would since some DNS records are updated slowly. Most will get the change in 24 hours though.

I recently bought a domain name, and then I had it hosted with the company I bought the domain from, but I never knew they did not allow subdirectories, so I went over to a new host and ordered their hosting services. I updated the ns through my registrar, but I'm wondering how long it will take to be able to resolve to my new host?

While using granitecanyon.com, it once took 12 days. That's abnormal though. Usually takes about 2 days.
