What is ICM and Color Management

I just got a Canon S600, and I've been messing around with some of the features. It appears to support a feature called ICM. From what I gather, it's a type of color management to match the actual picture to what's printed. The default profile in the printer driver is sRGB. I guess my question is, how do I enable the software to take advantage of this? Does PhotoShop support this? Are there profiles other than sRGB that are better and I can have my printer take advantage of?

Basically, I'm wonder just how to use this feature. I've never seen it before, and I'm having a hard time finding anything definitive about it.
