what is a good cheese to go along with wine?

what is a good cheese to go with merlot? personally, i think a salty cheese would go nicely with merlot but i am not sure what type of cheese that would be. I bought an apple smoked mozorella cheese to eat with my wine and it doesn't go well at all. so please educate me cheese/wine connoisseurs.

hmm... cheese goes quite a bit better with white wine, but i'd think that something with a stronger flavor would go better with red wine.

for a stronger red wine like merlot I like cheeses such as:

Manchego
Gruyere
Parmigiano-Reggiano

Merlot's I like to pair with dry, hard cheeses personally. Sometimes brie will make it in (depending on the brie). Gouda's might not be bad, cheddar's would be good as well.

Just go buy some and find out for yourself :) That's the most fun and best way to do it IMO :)

edit: I see that you bought Mozz. Mozzarella and wine do not mix.

edit 2: If you want to learn about cheeses, fuck cheese tours. Go to a local cheese monger or whole foods where they'll let you try anything and just sample a lot of different cheeses. Some days they have tastings and this is the best way to learn.

im not big on the wine and cheese combo. now, some red wines and chocolate...awwww yeah.

id want something aged with wine, however, thats for sure.

We have a cheese shop near our apartment... It's so nice to go in there. They give you little taster samples of whatever you want while you're in the store, and are great about offering advice on what to pair with the cheeses.

My current favourite is Brillart-Savarain (I hope I spelled that right).

depends on the wine, white or red / sweet or dry

merlots are traditionally dry so Camembert cheese would go great maybe also pair it with a crusty bread like a baguette

It's funny, I take for granted my cheese knowledge. In high school I worked at a gourmet deli and cheese store. I'm grateful for the expeirience.

They sold wine too. Even spelling nazis are fine company if they bring good cheese and wine.
