What happens if you unplug a phone while it's ringing?

Let's say someone is calling you, you have only one phone connected to that line, & you unplug it while it's ringing.

Can they hear a difference, or will it continue to ring for them?

Just keeps ringing dude.

They don't know what's going on past that box outside of your house.

So even with a phone plugged in the circuit is still open, it doesn't get closed until you pick it up?

As long as the phone jack(s) is/are active on the receiving end, it'll ring, there's just nothing there to let you know there's a call coming in if there's no phone connected.
