What graphics card to use for my initial build?

I've been debating this now for a couple of months and I'm looking to order parts on the 21st.

I'll be using the following.
1080p Monitor
750w PSU

I was thinking of using an Asus 570 and overclocking it. However this 560ti-448 has come out and seems to be of equivalent power for less moolah.

What about a 6950 and flashing it to a 6970? I'm tempted to do that but I'm scared of cocking it up and ruining it.

Or should I wait for these new 7xxx series cards? Some people say the high end cards might not be out till Feb/March time. Tbh I'd rather not wait I bought a lot of games in the Steam sale and I'm holding off on Skyrim till the PC is ready.

If any of you guys could help me out on this it would be much appreciated, it's been sitting in the back of my mind for a while now. I'm struggling to find a decent answer as whenever I ask it devolves in to fanboy fights or an argument over single card vs SLi/Xfire.

I thought only the original 6950 unit were able to be flashed to 6970 and now all gone, but I could be wrong!

Only problem I see with 1080 is video memory issues, so you may need to draw the line at 570\580 or 6950(2gb)\6970

Lots of people are saying you can still do it but I'm loath to try because I have terrible luck x x x
