It's essentially all sous-vide now. Even Panera Bread does it:


Kinda hard to get fresh foods & consistent flavor across hundreds or thousands of chains if you don't freeze & vac-seal!

That is why most chains are mediocre and unhealthy and completely inauthentic. When you have to make everything the same, you cater to the lowest common denominator, and you try to make up for it with rich things like butter, cream, lots of salts, fat, etc.... You don't need to be a world class chef to make a basic pasta dish the right way. Again if people like that, eat it. But it ain't EYEtalian.

re-heating in hot water bath is not the same as cooking with sous-vide.

My FWP of the day/week: I dropped and broke a new vial of insulin on my kitchen floor. There went $300 (worth).

Now I get to call my HMO and try to get another vial sooner than the scheduled refill date. Because they can't have people getting spares or extras...

I would love to watch some NBA playoff basketball right now but all the games are on TNT or ESPN and I don't have cable TV so instead I'm going to bed and the NBA will have one fewer viewer.

Had to make a few more stops after the grocery store. Outside temp is around 80. Got done with the rest of the stops and headed home. Driving along and ... BANG!!!

Glass is all intact. I'm still rolling, so it wasn't a tire. Look around, don't see anything odd. Figure maybe it was something laying on the road I didn't see.

Then I realize ... I had two rolls of refrigerated cinnamon rolls in the grocery bag. The kind you pull the foil back and use a spoon to pop the roll open.

Nope. Didn't need the spoon this time. Get home and start unloading, three of the five rolls spun out and were spread around the back cargo area.


Oh well.

Been wanting to go with a heat pump water heater, the only place that seems to sell them here is Home Depot and they only have 4 models (sizes) to choose from. So went to order the water heater but they're all out of stock, even for ordering, except for the 80 gal one. Was waiting to get my tax results before, just in case I end up having to pay. Welp, so much for that! Unless I go with the 80 gal one but it's way more money than I want to spend. Hoping to keep the total under 3k since that's what I have in my savings.

I may just go with a standard element one at this point, I'm thinking if I put it on a timer so it only runs during off peak hydro rates it might not be that much to run. I can also insulate the crap out of it. Could also go with tankless but I want to try to just get off of gas as at least with hydro I can generate my own power to some extent. Trying to reduce my bills.

Why not just go with gas? Electric will be much more expensive to run, and it will cost more to install if you need to add wiring.

Gas prices have shot way up so gas is costing a lot to run too, pretty much everyone's bills doubled here, and it's probably going to keep going up. The wiring wont really be an issue as it's close to the electrical panel. Though with price of copper these days I can probably add $100 to my price as I think I need 12 gauge and not 14 gauge (which I already have a roll of from pre hyperinflation days). 3kw @ 240v is 12.5 amps so in theory 14 gauge might actually work, but I'll want to see what the manual actually says I need. It might want to oversize wire as it's considered a constant load.

I'm going to wait it out though, and see if more offerings for heat pump ones become available. They're still pretty new. I did the math though, even if I go with a standard electric, since I can run it on a timer, and it's 100% efficient vs like 40% efficient, I'd actually still save. Problem is they will probably jack hydro prices too eventually. Even once I add more solar, it's only going to go so far.

you are going to need very expensive air source heat pump up there. Or rather it's a poor fit for Timmins. Maybe ok for GTA, but not Timmins.

The "outside" unit actually stays indoors, it's built into the tank. It will make the air colder, but essentially it's just using the house heat to heat the water. Guess the best way to think of it is a reverse water cooler.

They do make mini split heat pumps that can go down to like -30 though. Before I got the wood stove I was humoring just putting one in. We barely even get -30s here anymore anyway. We get maybe like a week of it at most.

err how is that more efficient? you spend money to heat up the house, then the water tank sucks that heat out to heat water? You are losing at least the conversion loss.

well you are one person so hot water tank makes no sense to start with. And the lowest tier gas water tank is in the 58-60% conversion range.

I think I just read my first ChatGPT-generated article on an industry news site. The arrangement and redundancy strike me as very odd, particularly since articles on this site are usually well written.

I didn't read it all, but it came across like a grade school report where the kid gives a list facts in a style that barely reaches the level of prose. Staff Writer looks like he's written numerous articles. Curious they don't have a biography for Mr Writer.

Ran into one of 'those' people today. Rare thing too, not many around here, but this one was the only person in her world. Pulled up in the middle of about four parking spaces. Dawdled the whole time, fussing over placement of items in packages in the back of her whatevermobile. Paid no attention at all to others around her who had to work around her ill placement.

Was riding my new scooter when a lil bastard bratty ass 5 year old told me that he bet I couldn't do a wheelie. While I knew he wasn't incorrect, and attempting a wheelie would be pretty dumb with my lack of riding experience. I'm petty enough that I wasn't about to let a Kindergartener call me out like that. I zoomed up and down the street 3 times in preparation, and when I tried one, the front tire probably made it about 1/2 an inch off the ground for a split second. What a fail...

And to add salt to the wound when I came to a stop he was laughing and said "SEEEEEEEE I told you!" I made the smug kids day and the sting of getting clowned by someone born in 2018 was no Buenos. But on a bright note, if I had successfully pulled off an actual wheelie I probably would have eaten it on the landing and have road rash or a broken bone. But it still sucks that a rug rat old got the best of me.

I'm going to practice like the Karate Kid until I can do it and blast by his house going 30 in full wheelie mode. Ain't no way a half a decade old fool gonna get the last laugh on me...
