What exactly is the "RULE" for 2 vs 4 RAM sticks?

I'm a bit confused.

I have an A64 3000+ Venice Rev. E and a DFI LanParty UT Ultra-D.

I bought the 1GB OCZ Value VX DC Kit.

Now if I wanna upgrade to 2GB RAM I'll either have to run PC2700 or get 2x 1GB sticks??

Am I understanding correctly??
