What does iTunes sync on an iPad?

We have an iPad at the office with Voice Recorder HD, and we need to be sure that there is no possible way these meeting recordings are being sync'd via itunes. Is that even possible? If so, how do we check to see what iTunes may be syncing from the iPad?

The only items enabled within iCloud are photo sync and the 'find me' or whatever it's called for locating/wiping a lost iDevice.

I think part of the backup process is saving the state of each app. I'm not sure though.

Uncheck syncing of apps. Also, go through all the tabs and uncheck syncing of everything else of you want to be absolutely sure

Actually the only place you need to worry about is the "File Sharing" section under the Apps tab.

That is the only place really that data from an app can be copied locally to your machine other than the app backup itself, which doesn't contain any user data.
