What does 'gelling point' mean in relation to diesel and diesel engines?

A lot of sites I am researching about mentioned gelling point of diesel fuel in teh cold weather. I am guessing that it means the fuel will freeze up or lose viscosity. Any explanation?

Diesel fuel has parafin in it. When it gets cold out, the parafin solidifies.

Think Jell-O. Now imagine diesel smelling Jell-O. That is what diesel turns into at sub zero temps without a anti-gel additive. It is kinda hard to squirt jigglers out of injectors. Wow, say that fast.... jiggler injector jiggler injector jiggler injector.
