Ok, my friend and I are having a bit of a disagreement here.

For BBQing (especially in cook-offs), do they use sauces or rubs on the meat?? Since they are slow cooked, I think that most of the (winning) competitors use rubs, because the meat is cooked for a longer time, but he says that sauces carmelize better, and give the meat a better taste in the longrun... Opinions???
 
All I can say is that I find it funny that "Tea Bag" is trying to figure out if it's better to rub meat or if sauce will improve the flavor of the meat.

Somewhere inside my brain, a 12 year old is laughing.

for most of the cooking process, its rub only.

only sauce at the end when the meat is already done to make it shine.

although if its ribs, a case for rub only can be made.

you can also always just offer sauce on the side.

 
Wait, are you smoking, barbequeing, or grilling the meat? Smoking is between about 140 to 200 degrees, barbequeing is bewteen 200 and 375 and grilling is 375 and up. What meat you are cooking and how you want to cook it decides what to use to marinate the meat, imo.

Here's the solution:

Just rub your meat and then you'll have sauce.
