What do you guys think of Ceramic Knives?

I'm majoring in Electrical Engineering. Math 12a, english 57, pre-chem *yes, I know those are pathetic classes* and CS30b.

Not any of mine. Well, sometime around. I only have morning classes so I'm not on campus much.
 

I owned one ceramivc pocket knife and it was rather nice, not something I would use in the kitchen.

Henckles are considered some of the best knives available.
I can attest to that, I own a block with 5 knives and a steel, 4 star is the set I own now.
They are carbon steel, so they do require hand cleaning and care, but they will serve you for years.

Once you cut with good knives you will absolutly H A T E cutting with inferior cutlery.

My friend nearly cut his little finger off with a CutCo knife. He was drunk off his a$$ at the time, but that's completely besides the point. Well, maybe it's not.

the one knife I would not leave home without is the big crazy chinese cleaver we have.

I use it to chop everything, from veggies to whole chickens. Seems kinda weird, but I've grown accustomed to handling it for even more delicate operations.

I can julienne carrots with it without difficulty =)

lol, those cleaver are fun to bring to gang fights... they looks so.... ghettoo... its like you can't afford a samurai katana and just grab Uncle Joe's butcher knife...


anyway, I smell love in the air... ;p

I got the Henckles with diamond imbeded in the metal that works pretty good once you cut off the fingers that typically get in the way. I looked for them on the net but don't see that style. They look like five star except for the edge.

CUTCO is crap sold door-to-door and nowhere near the quality of Wusthof and Henckels. Global is also very good but their balance is a bit different than most knives which threw me off.

I have several Henckels, my favorite of the bunch being a cheap version, called an Eversharp, that is serrated.

I have never tried the Global, so I couldn't judge, but I'll keep that in mind if I ever come across a deal on one.

Henckels, Wustof, and Sabatier are all excellent steel brands. However Henckels does have a lower brand that is not as good as their 4-Star line. They all perform equally well, they are just weighted differently. Some are heavier on the handle side which keeps the knife in your hand more, others are heavier at the blade end which allows for faster cutting/chopping. I have a Wustof paring knife which I love and a Henckels chef's knife, and some awesome Henckels steak knives. My next knife will be a cleaver most likely, not sure which one I'm gonna pick up, I might check out some steel ones at my local Chinese grocery store hehe.
