Yep. Some taco shops even stuff them into a corn tortilla and serve them up with chopped cilantro/onions, guacamole and salsa on top.

I grew up with those as rinds, pork rinds, pork skins, or just skins, but since moving to California, the most common term seems to be chicharrones.
