Because surely that should be azzuro following the logic?

There are many types of blue cheese. I guess they wanted to sound cultured so they went with French bleu. Sounds better than Penicillium cheese.

Usually go for something sharp. I also enjoy Gouda which wasn't an option.

I like cheddar, but I'm not picky. I'll just use whatever I can find.

I haven't made burgers for couple of months. I found great local bar restaurant that makes really good burgers. As good or better than the burgers I make at home. So I've been lazy and ordering rather than making it at home.

Just classic ingredients:

Lettuce & tomato are a must. Cheese is not that crucial. Ketchup at minimum. Mayo can work. Don't care for bacon in burgers.

85% burger with chopped Vidalia onion mixed in, heavy salt and pep. No chez, maybe a slice of good tomato ( Beefsteak or Brandywine preferably)

Grilled some on Monday. Very tasty! I don't always put cheese on them, but when I do it's either cheddar or swiss.
