For example, what is the difference between level 1 and level 2 (and so on) support?

rather... the more they support..

level 1 - basic desktop support, with no onsite service
level 2 - slightly more advanced support, may require onsite service
level 3 - onsite service.

MONEY!!

Seriously... (example in MS Networking environment)

level 1 - basic supports (basic OS and software supports)
level 2 - standard supports (adminstration and involve some troubleshooting)
level 3 - advance supports (involve registry hacks and networking troubleshooting)

For more information about the difference, check with salary.com.
