What do Memtest and Siscoft Sandra test for? Just for instability and failures?

also, is burning in for a lengthy time a good idea or not?

Sandra test your memory bandwidth.

MemTest will test to see if your RAM is bad or good.

Burning will vary, companies setup up a benchmark saying how many hours it can operate before failure, (MTBF?) Mean Time Before Failure, IIRC. So if you burn once or a lot it won't matter.
