I'm stuck as to which computer I should take. Here are my two choices:

Option 1)

Intel Q6600 Quad Core
1GB OCZ DDR2-800 Plat
BFG GeForce 7900GS 256MB

Option 2)

Intel Core 2 Duo E6300
2GB OCZ DDR-2 Plat
XFX GeForce 7950GX2 1GB

Both use the same motherboard Asus P5B Regular.

I only use the computer for gaming, Oblivion, Stalker, Rainbow Six Vegas.

Neither.

Get an 8800gts 320, then get 2GB ram then get the best cpu you can after that.

It would be stupid to buy a quad for gaming at this point. Nice for bragging rights, but by the time games are written to take advantage of quads, they will be much much less expensive. I say go with a DC and use the extra money for something else like RAM, and 8800, or a monitor upgrade.

If you genuinely need a quad core for other apps that will actually benefit from the extra cores, you might as well wait until the upcoming price cuts. The Q6600 is going to be very affordable soon, from what I've read.

Definitely option 2, no question. You really should think about a different video card though, a 8800 GTS 640 would be perfect.

I have known a couple people with the 7950GX2 and they were buggy as hell.

Option 2, but dont use an 7950GX2, a single 8800 GTS/GTX is going to be much better in the long run.

what are these options based on? Did you just list to comparably priced systems (and if so are you willing to change parts) or are they both already bought and built and you can take 1? As others have said until Alan Wake and a couple of other games come out near the end of the year quad core doesn't do anything for gaming (unless you run a lot of stuff in the background while gaming) and a n 8800gts makes a lot more sense over the gx2).
